From the blog of Sierra FoodWineArt magazine:
Here’s a food scoop: The Quiznos in downtown Grass Valley is closing but keeping the same owner. The owner’s other Quiznos franchise in Brunswick Basin will remain open, pumping out the popular hot deli sandwiches.
But here’s the most exciting news, worthy of regional attention: The Grass Valley store at 121 Neal Street will be transformed into KJ Lunch, which will sell pizza from a world-award winner, along with fresh-made soups and sandwiches.
In February, KJ Lunch will serve award-winning pizza from a world-champion pizza maker. Pizza-maker Shawn Randazzo will come to KJ Lunch to provide personal training to make his award-winning “Detroit-style” pizza.
Last year, Shawn was crowned World Champion Pizza Maker of the year, the industry’s most prestigious award, at the 2012 International Pizza Expo in Las Vegas.
“It’s an incredible honor to be named World Champion Pizza Maker of the Year, alongside so many master pizza chefs,” said Shawn. “We’ve said for years that Detroit-style pizza is among the world’s best, and it gives me great pride to prove it with this victory.”
(For context, Lefty’s Grill in Nevada City — now expanding its restaurant because of success — won a pizza-making award at the same prestigious conference, as we reported previously.)
For his part, Shawn had created a new Detroit-style pizza that blends traditional authenticity with his own signature touch for a rich, flavorful pizza destined to impress the palate.
And now it’s coming to Grass Valley. Detroit-style pizza is often referred to as “upside-down pizza” or “red top pizza” because of the way its prepared:
1 – Start with a thick, chewy Sicilian crust
2 – Line the crust with a layer of pepperoni
3 – Mound plenty of cheese on top (traditionally brick and mozzarella)
all the way to the edge
4 – Heap any extra toppings on the cheese
5 – Drizzle on a thick layer of signature red sauce that trickles
through the bubbling cheese

So Jeff, when did you become a PR flack?
John,
Down Fido! This pizza even beat out Lefty’s in your beloved Nevada City. This pizza contest is the “real deal.” Ask the “two lefties,” John Cammack and his partner, Chris Duncan in our beloved “lefty” town. Try it and then come crying to me with a big apology! If I’m wrong, I’ll buy you a slice (and your beloved martini @ Friar Tuck’s). I get around. Happy New Year!
Maybe I should raise my rates! The show “Good Morning Sacramento” saw this and called the Grass Valley Downtown Association to schedule an interview when the pizza-maker comes to town. They specifically mentioned our magazine’s blog, which is promoted at SacBee.com, as the source.
What about Jerry Cirino blaming Barack Obama for his decision to close his 30 year biz in Nevada City. . . ? Weak.
The GV Cirino’s has a GREAT menu with FABULOUS food. . . I worked there, for him, for almost 3 years. . . And after what came down to a one-year personal strike to ever walk in that joint again, I DID return b/c the food is sooooooooo good! . . . At least as local restaurants go. Whereas the NC restaurant’s food pretty much bit it. . . Literally. Was always confused about that. . . Maybe THAT is the reason biz wasn’t so good.
Will miss the beautiful bar tho. And the lovely staff!
“What about Jerry Cirino blaming Barack Obama for his decision to close his 30 year biz in Nevada City. . . ? Weak. ”
That’s exactly what stood out for me. I’ll take up where you left off on your personal strike.
It seems the town is in for a real treat, but I don’t know how Shawn will be able to top what we used to get at Cowboy Pizza on Spring Street. Cowboy Wally had the best pizza, best service and best entertainment of any pizza restaurant I have ever been in. Had he entered the world competition, Wally would have quickly retired the cup.
That said, good luck, Shawn –– nothing quite like a great pizza.
Ummm, more cholesterol. I’m sure Sierra Nevada Memorial will appreciate the additional business.
Detroit-style pizza? Isn’t that where Little Caesars and Domino’s come from?
